Succulent simplicity is one way to describe the flavors and aromas you experience when you join Chris “Shaggy” Davis for one of the frequent pleasures we New Olreanians indulge in at every opportunity. For Shaggy, owner of Boil Inc., the beauty is in the boil. Shaggy’s approach involves the simple basics that make this South Louisiana tradition so delectable—the freshest seafood, the perfect tried and true techniques, and of course lots of personality. Check out this video for a lil preview…

MENU for December 7th @ Anders Osborne’s 1st Annual Holiday Spectacular

Boiled Shrimp With Potatoes & Corn
Get ready to satiate your inner Cajun. Straight from the docks, plucked from local waters, scrumptious jumbo shrimp are boiled to perfection with the ideal balance of seasoning to let the mouth-watering flavors surface with every bite. Eat like a Southerner with sides of potatoes and corn boiled in the same delicate manner. Down-home cooking never tasted so good!

Chicken & Sausage Jambalaya
Louisiana kitchens have been cooking up this local specialty for years. The beauty of this dish is the freshness of locally made sausage. Infused with seasonings, herbs and spices, hand-selected by the steady hands of local food craftsmen, and melded together with the freshest cuts of prime meats, this basic fare brings chicken and sausage jambalaya to life. Made by Shaggy, with love.

Chicken & Andouille (Ahn-doo-ee) Gumbo With Rice
That’s right—we talk funny—but not when we are eating gumbo! A staple of the Southern diet, chicken and andouille gumbo will leave your palate pining for just one more spoonful. Shaggy builds from a roux, and then adds the traditional trinity of vegetables, tangy homemade andouille (all beef sausage), and of course his own secret touches, served atop a bowl of steaming rice. This is a dish you will be talking about all the way home.

Shaggy’s Seafood Pasta
He starts with the freshest local seafood. He builds his sauce with the finest ingredients, and he adds the New Orleans flare you will find only here. This creamy delectable dish is both rich and delightful. The flavors surrounding each bite will leave you with a little taste of Louisiana elegance.

Cochon de lait With Cole Slaw and all the Fixins
Enjoy the richness of the Cajun French tradition of the Cochon de Lait, also known as a pig roast. Using only fresh suckling pigs from 25-80 lbs. This cultural tradition retains its primitive roots, but has been fine-tuned to produce the most appetizing result. Enjoy your freshly roasted pork on its own with a smattering of sides, or on French bread with a healthy heaping of homemade cole slaw. A dining experience you will always remember.
